Wurst is available for free at WurstClient.net, just with some ads on the download page.
There is also the option to buy an ad-free pass for a one-time fee of $10 (or less depending on regional pricing).
Finally, there is the option to become a monthly supporter on Ko-fi and get perks like an in-game Wurst cape or early access to new Wurst versions.
When early access versions are available, you can see them on WurstClient.net/download (marked "members only") and you can always read the changelog before subscribing so that you know what you're getting.
As for anticheat plugins, there is always a chance. It often depends on your usage and the server in question. For example, actions like flying around in front of others or crashing the server are likely to raise suspicion - both from plugins and from the humans running the server, but more subtle hacks like Freecam or ESPs might go unnoticed. It's important to remember that there is no guarantee - after all, a server admin can just ban players whenever they want to.
