As of right now, there's no set date for a Wurst 8.0 release. Each major version typically correlates with significant changes in the way how Wurst works.
Historically, Wurst 2 was when Wurst updated to Java 8 (before Minecraft itself did), Wurst 3-5 were tied to Minecraft updates (Wurst 3 = MC 1.9.x, Wurst 4 = MC 1.10.x, Wurst 5 = MC 1.11.x), Wurst 6 was when Wurst switched to a system that made it independent of Minecraft updates, and Wurst 7 was when Wurst switched from MCP to Fabric.
Regarding the ItemESP nametag removal, this option was removed because it doesn't work properly in modern Minecraft versions. While there have been workarounds proposed, so far they all ended up causing issues in other areas.
